In Chinese culture, red symbolizes joy, good fortune, and celebration, and this salad embodies all of this along with of course an abundance of skin boosting benefits.
This salad is not only packed with antioxidants it’s also fantastic for increasing nitric oxide (reduces inflammation and improve skin barrier health) and giving your liver a boost.
The crispness of red cabbage, radicchio, and radish is balanced by a creamy beetroot hummus dressing. Topped with crunchy pomegranate arils and sweet cherry tomatoes, it’s a beautiful treat for your skin and tummy.

Red goddess salad
1/2 red cabbage, finely chopped
1 cup radicchio, finely chopped
2 watermelon radish, finely sliced
2 cups cherry 🍅, sliced or kept whole
1 cup pomegranate arils
Beetroot Hummus Dressing
1/3 cup hulled tahini
1/3 cup lemon juice
2 tablespoons water
1/4 cup olive oil
1 cup beetroot, peeled
2 Cups Zucchini, peeled
1/3 cup almonds, soaked 8 hours and rinsed
2 tablespoons Balsamic vinegar
1 teaspoon cumin
1 teaspoon Celtic salt
1 clove garlic
Method
Place all ingredients for the salad together in a bowl reserving 1/2 cup cherry tomatoes and pomegranate arils for the topping.
For the beetroot hummus dressing
Place all ingredients together in a blender and blend till smooth and creamy.
Pour onto the salad.
Mix into the salad well and top off with the reserved cherry tomatoes and pomegranate arils.
