Green Goddess Skin Glow Salad

Serves: 2-4
Ingredients:
For the Salad:
- 1/2 small cabbage, finely chopped
- 2 cucumbers 🥒, finely diced
- 1 bunch of asparagus, blanched and finely chopped
- 1 cup edamame, blanched
- 1/4 cup dill, finely chopped
- 1 cup lentil sprouts
- 1/4 cup hemp seeds
For the Dressing:
- 1 avocado 🥑
- 3 tablespoons olive oil
- Juice and zest of 1 lemon 🍋
- 1 cup fresh herbs 🌿 (basil, parsley, cilantro—your choice!)
- 1 tablespoon nutritional yeast
- 1 tablespoon Dijon mustard
- 1 garlic 🧄 clove, minced
- Salt and pepper to taste
Method:
- Add all the salad ingredients to a bowl.
- For the dressing place all the ingredients in a blender and blend till smooth and creamy.
- Add it to the salad bowl and mix in well.
- Let sit for 10 minutes to marinate and enjoy.
- It’s great with seed crackers.
